What is a food forest?

A food forest is not a typical orchard. It is an advanced form of polyculture - a multi-layered system that looks wild but is packed with edible plants. The structure mimics a natural forest with multiple "stories" of food: large trees above, mid-size shrubs beneath, herbaceous understory and ground covers below.

Traditional gardens are flat. Food forests are vertical. In a small space you fit ten times more food by using all the height. A true food forest on 50 square meters can feed a family four months.

Which five layers do you stack?

The food forest works because it copies natural patterns. Each plant level uses different light and different nutrients. Five levels stack efficiently.

Level 1 - Top tier (trees): Dwarf and semi-dwarf fruit trees. Apple (Gala, Fuji), pear (Conference), plum, nectarine. These grow 3-5 meters tall and produce 20-40 kg fruit yearly each. Minimum two for cross-pollination.

Level 2 - Small trees (hazelnut, walnut): 2-3 meters. Hazels give nuts, walnuts give food and shade for understory. Hazelnut (Corylus avellana) is stronger and also gives branches for garden work.

Level 3 - Shrubs: Blueberry (Vaccinium), Blackberry (Rubus), Red currant (Ribes rubrum), Black currant (Ribes nigrum), Elderberry (Sambucus). Each blooms at different times and serves different purposes. Wild shrubs without powder or spray.

Level 4 - Herb layer: Alliums (garlic, shallot, leek), mint, carnation (Dianthus), borage, brassicas (cabbage, broccoli, kohlrabi). These are your winter greens and herb stores. Rotate seasonally.

Level 5 - Ground cover: Low plants that blanket soil and are not walked on: strawberries (wild and cultivated), oregano, thyme, marjoram, calendula, wintergreen (Gaultheria). These smother weeds and prevent erosion.

How do you plan the layout on 50 square meters?

Triangular works better than square for small food forests. Big trees center or north side. Structure follows sunlight.

Scenario: 5 meters by 10 meters strip (50 m2).

  • Center: 1 dwarf apple (3m crown diameter), 1 hazelnut (2.5m) behind
  • North-east: Blueberry (1.5m), Blackberry (1.5m)
  • South-west: Red Currant (1.2m), Elderberry (2m)
  • Around and between shrubs: Herb and ground cover layers
  • Space: Minimum 1 meter pathways for harvesting

This gives roughly 20 square meters net planting area after paths.

What is the step-by-step setup plan?

A food forest does not grow in one day. But the heavy work is done by month three.

Month 1 (Spring, April): Soil prep. Spread 15 cm compost, 10 cm aged manure, 5 cm mulch. Dig and sift. This fast-tracks soil two years ahead. Plant your big trees now.

Month 2 (May): Plant shrubs as soil is ready. Vary height and color evenly. Mulch each heavily.

Month 3 (June): Plant herb layer seeds/seedlings (garlic, cabbage, carnation). Space ground covers (strawberries, oregano, thyme) at 30 cm intervals.

Year 2: Only mulch and harvest. No digging anymore - the soil works itself.

What are the five core rules for food forest success?

  1. Mulch heavily: 10 cm chips or straw under every plant. This prevents weeds, holds water, and makes fertility.

  2. Never dig: Once planted, soil is sacred. No digging after setup. Bury compost at surface.

  3. Plant dense: This is not a normal garden. Plants stand 30-50 cm apart. This prevents erosion and speeds production.

  4. Combine nutritionally: Combinations help. Green manure between trees. Nitrogen-fixing (garlic, bean) next to heavy feeders (cabbage).

  5. Heavy first two years, then silent: Year 1-2 much work. Year 3+ it self-maintains. This is not labor-heavy - it is working soil that does everything.

Step-by-step

Step 1: Measure your spot

Measure the area you want. Determine sun and shade at different hours. Specifics: drain pipes, alcove, heat-giving wall. This determines what goes where.

Step 2: Prepare soil in April

Bring in 15 cm compost, 10 cm manure. Remove large stones. Mulch heavily. Plant your trees now in the center.

Step 3: Add shrubs in May

Plant your 2-3 shrubs per plan. Mulch heavy (10 cm). Make no holes - sit your plant atop the thick mulch bed and bring mulch around it.

Step 4: Sow herb layer in June

Garlic, broccoli, carnation seed/plant. Strawberries, oregano, thyme ground covers at 30 cm spacing.

Step 5: Maintain mulch

This is the only rule for year 2-3. Refresh mulch as it grays. Nothing sprayed. Nothing watered (rain does it). Just harvest.

Frequently asked questions

How long before food comes?

Blueberry: year 2, small. Year 3, full. Blackberry: Year 1, small. Year 2, abundant. Apple: year 2-3, small. Year 4+, full. Worst case: you eat nothing year 1, everything year 3+.

Where do you get all those plants?

Hazelnut and dwarf apple: nurseries. Blueberry, Blackberry: native wild varieties cheap via growers. Herb plants: seed via mail. Strawberries: refurbished mother beds (harvest 4 weeks, then discard).

Spraying is necessary against pests, right?

No. In a food forest insects balance each other. Bare trees with scale - blueberry shrubs have no such problem. Diversity solves it.

How much water in dry summer?

Year 1: Lots. Two times weekly ground watering. Year 2+: None. Thick mulch holds 80% water. A food forest is drought-proof.
