Cow-parsley (Anthriscus sylvestris) is a versatile biennial wildflower from the Apiaceae family. This elegant herb grows 60-120 cm tall and thrives in grasslands, hedge banks, and semi-shaded areas.

Cow-parsley is very frost-hardy to USDA zone 4 (-34°C). Frosty winters are not a problem. Foliage can even stay reasonably green through mild winters.

Young plants can suffer frost damage, but simply regrow.

Cow-parsley grows well with:

  • Early spring bloomers: Trillium, Erythronium, Pulmonaria
